In my perpetual search for healthy eating on the go, I found Rawxies. And I am super happy for it. These adorable hearts of yummyness were just the breakfast I needed one morning rushing out the door. Try some for yourself!

Cucumber Mint Water

Infused waters are so wonderful, especially on a hot day. A friend gave me a big stack of fresh herbs from her garden. They smelled so good that I wanted to do something right away. What you will need:

2 long sprigs of fresh mint

1 short spring of rosemary

1 cucumber, about half the skin removed and sliced into thin circles

Place all ingredients in a large jar or pitcher. Add filtered water until full. Cover and set in fridge for at least eight hours. I let mine sit overnight. Try to drink within 24 hours.

This was so refreshing the next day. Yummers!

Avocado Dip

In addition to the artichoke dip I loved in Spain, was an avocado dip. So yummy and easy. You may already be making it! What you will need:

2 ripe avocados

1 TBS fresh lemon juice, from a lemon

Hot sauce (optional)

Crusty bread

Remove pit and peal of avocado and mash the meat. Stir in lemon juice. If wanting a little kick, stir in a favorite hot sauce. Serve immediately with crusty bread. Yummers!

Green Smoothie

Kale is one of my very favorite foods. Not just because I find it to be delicious, but because it is so very healthy. There are days I actually crave kale and these are always great days for a smoothie. I pack mine with protein too to keep me full for hours.

2 cups almond milk

1 banana

1 handfull of blueberries, about 1/2 a cup

1 TBS chia seeds

1 handfull baby spinach, about 1/2 a cup

2 TBS raw almond butter

2 medjool dates, seeds removed

4 kale leaves, stems removed, I like purple kale

Place everything in a blender and blend until very smooth. I have an inexpensive blender and blend for about 90 seconds while upping the blend speed every ten seconds or so.

This smoothie can be made with water. Replace the 2 cups of almond milk with 2 cups of water and add a third date.
