Creamy Potato Kale Soup

Another giant crock pot recipe that warmed my tummy. Cut ingredients in half if using a normal sized crock pot.

1 bunch kale, stems removed and torn into smaller pieces

1 pint small red potatoes, diced

2 pints small gold potatoes, diced

1 non-chicken bouillon cube

1 onion, diced

12 cups water

1 cup raw cashews

1/2 cup nutritional yeast

Place all vegetables, bouillon, and water into crock pot. Cook on low all day, or at least eight hours. At end of day place cashews into blender with broth from soup and blend until creamy. Add to soup. Using a potato masher, mash some of the potatoes in the crock pot and stir in nutritional yeast.

Oh, my mouth is watering. Yummers!

Piles of Quinoa

I wan’t going to call this a recipe, but it looked so yummy I thought others might be interested.

I was trying to make balanced and filling lunches for work when I decided to pile a bunch of things together. It turned out fantastic. One batch made six different frozen lunches for work. What you will need:

3 sweet potatoes

2 bunches of kale, stems removed and torn into smaller pieces

1 cup red quinoa

1 can back beans

1 can corn

1 vegetable bouillon cube, no salt added

Cook quinoa according to package directions with the bouillon cube in the water. Steam kale to desired crispiness. Wash sweet potatoes and stab each one in multiple places with a fork. Place is a microwave safe dish with a lid and microwave for 10 minutes. Let cool and mash with a potato masher. Drain and rinse the back beans and place in a large bowl. Drain corn and add to bowl. Stir in the quinoa.

In six separate dishes, layer the kale, sweet potato, and quinoa mix. Cover a freeze each dish separately. When ready to eat, let defrost a few hours or run the bottom side of the container under water until to can easily slide out. It thawed, microwave for 2 minutes. If frozen, microwave for 5 minutes and check if ready. If needing more time, try another 2 minutes. Yummers!

Hot Potatoes and Cabbage

The CSA gave us a beautiful purple cabbage and some potatoes. They made this yummy dish. What you will need:

4 potatoes, the size of your fist, cleaned and diced

1 onion, diced

1 TBS minced garlic

1 tsp avocado oil

1 small head of purple cabbage, center removed and diced

1 4oz can diced green chilies, I always enjoy Hatch chilies

1 can red beans, drained and rinsed

Sea salt and pepper to taste

Saute the potatoes, garlic, and onions in avocado oil on medium high for five minutes. Add the cabbage and cover the pan. Stir regularly until everything is cooked, at least another 10 minutes. Remove from heat and stir in all other ingredients. Yummers!

Sweet Potato and Kale Soup

I realize it’s 300 degrees outside (exaggerate much?), but I made this soup when it was cold outside. Another crockpot satisfying meal. Again, I have a giant crockpot to ensure leftovers for the freezer. If yours is normal sized, please use half of everything. What you will need:

2 medium sweet potatoes, diced

1  onion, diced

1 bunch of kale, stems removed and coarsely chopped

1 box of mushrooms, chopped

1 cup uncooked barley

2 cubes of not-beef bouillon

1 cube no salt added bouillon

1 medium turnip, peeled and diced

1 package beer brats, sliced into circles

12 cups water

1 cup nutritional yeast

Place everything but the nutritional yeast in a large crockpot. Cook on low for eight to nine hours. Stir in nutritional yeast. Serve hot. Yummers!

 

Sweet Potato Party

This is one of my favorite meals when busy. Super easy, full of yummy, and is beautiful. What you will need:

Sweet potato, the size that will fill you up, washed

1 small tomato, diced

1 cup frozen vegetables of your choice, I used broccoli and corn, defrosted

Vegan margarine, I used Earth Balance

Vegan cheese, I used Daiya mozzarella

Place sweet potato in a microwave safe dish with a lid and cook for 10 minutes. Using a gloved hand, squeeze potato and make sure fully cooked. It should feel soft. If still hard, cook another minute and repeat until soft. Slice open and spread margarine over the halves. Dice potato and cover with a layer of cheese. If desiring extra melty cheese, microwave for another 30 seconds. Cover with defrosted vegetables and then the tomato on top. Yummers!
